Ingredients
1.5 litres strong black coffee
50 ml sugar
1 orange, lemon or naartjie studded with 3 whole cloves
2 bay or lemon leaves
1 stick cinnamon
50 ml Van der Hum (optional)
125 ml brandy
250 ml cream (optional)
Ground cinnamon to sprinkle on top
Method
Place coffee, sugar, fruit studded with cloves, bay or lemon leaves and cinnamon stick into potjie. Heat over a slow fire so that the flavours blend well.
Add Van der Hum.
Pour brandy into a soup ladle or enamel mug.
Heat carefully over the fire and set alight.
Pour the flaming brandy over the coffee.
Pour coffee into mugs or cups.
Hold a spoon over the coffee and pour the cream very carefully onto the spoon so that the cream floats on top of the coffee.
Sprinkle a little cinnamon on top and serve immediately.
