Ingredients
250 ml haricot beans
2 large onions, chopped
1 clove garlic, chopped
15-30 ml butter
5 ml curry powder
1 bay leaf
5-7 ml salt
Freshly ground black pepper to taste
250 g dried apricots or apples or 1 fresh quince
15 ml vinegar
250 ml meat stock or water
Method
Place beans in smaller potjie.
Cover with cold water and bring to the boil.
Boil rapidly for 5 minutes.
Remove potjie from fire and allow beans to soak for 1 hour.
The beans can also be soaked in cold water overnight.
Using the larger potjie, sauté onion and garlic in heated butter until transparent.
Add curry powder and fry gently.
Add remaining ingredients, including beans, and simmer slowly until beans are tender.
Serve with rice.
