Ingredients
1 kg mixed dried fruit
50 ml honey
25 ml brown sugar
1 litre apricot or orange juice
25 ml lemon juice
25 ml custard powder
25 ml cold water
MUESLI DUMPLINGS
250 ml self-raising flour
2 ml baking powder
125 ml muesli
50 ml coconut
50 ml chopped nuts
30 ml brown sugar 1 egg
250 ml natural yoghurt
30 ml melted butter
2 ml salt
Cinnamon sugar
Method
Mix dried fruit, honey, brown sugar, apricot or orange juice and lemon juice in a potjie.
Cover with a lid and simmer for 45 minutes or until fruit is very soft.
Mix custard powder and water and add to fruit.
To make the dumplings, mix dry ingredients together.
Beat egg, yoghurt, melted butter and salt together and add to dry ingredients.
Drop spoonfuls of dough on top of fruit.
Cover with lid and simmer for about 20 minutes.
Do not peep, otherwise the dumplings will collapse.
Sprinkle with cinnamon sugar and serve immediately.
