Ingredients
60 ml olive oil
500 g green beans, cut diagonally into 10 mm slices
1 medium onion, chopped
1 green pepper, seeded and chopped
1 tomato, skinned and chopped
Salt and freshly ground black pepper to taste
5 ml sugar
100 ml water
Method
Put oil in potjie and arrange vegetables in layers, starting with beans and followed by onion, green pepper, tomato, salt and pepper.
Sprinkle with sugar and pour boiling water over.
Cover with lid and simmer gently over a medium fire for about 30 minutes or until the vegetables are done.
Can also be served cold as a salad.
