Flat-bottomed Potjie No: 3

Ingredients
10 medium potatoes, peeled and thinly sliced
1 large onion, chopped
50 ml chopped fresh parsley
6 spring onions, chopped
10 ml salt
Freshly ground black pepper to taste
1 sprig fresh thyme or 5 ml dried
250 ml chicken stock
250 ml low fat cream or sour cream
30 g butter
150 ml grated Cheddar cheese
Method
Grease a flat-bottomed potjie with butter.
Arrange the potatoes, onion, parsley, spring onions, salt, pepper and herbs in layers in the potjie, repeating layers until all ingredients have been used up.
Pour heated stock and cream over the top and dot with butter.
Cover with lid and place on a small, slow fire for 45 – 60 minutes or until the potatoes are soft.
Sprinkle cheese over, replace lid and leave on fire for another 10 minutes or until the cheese has melted.
Serve immediately.
