Yellowtail Potjie

Ingredients
1.5 kg yellowtail, sliced into portions
2 large onions, sliced
50 ml cooking oil or a mixture of butter and oil
3 large ripe tomatoes, skinned and chopped
5 ml salt
Freshly ground black pepper to taste
5 ml chopped fresh thyme or 2 ml dried
½ cabbage, shredded (broccoli or cauliflower can also be used)
3 stalks leafy celery, chopped
500 g fresh green beans, cut into pieces
6 carrots, coarsely grated
Extra butter
Method
Sauté onion in heated oil or mixture of oil and butter until transparent.
Add tomato, salt, pepper and thyme and simmer to a pulp.
Add vegetables to tomato mixture.
Stir very well so that vegetables are well coated with tomato.
Place fish on top of vegetables.
Dot with more butter.
Cover with lid and simmer slowly for about 45 minutes or until the fish is cooked.
